The historic Buckhorn Exchange Restaurant, the oldest operating restaurant [as of 2017] in Denver, Colorado. The establishment, which has liquor license Number One in the State of Colorado, was founded in 1893 by Henry H. "Shorty Scout" Zietz, one of the scouts who rode with William F. "Buffalo Bill" Cody. Indian Chief Sitting Bull, dubbed the diminutive cowboy "Shorty Scout." due to his diminutive stature. But he would gain his fame from his restaurant, not his exploits in the saddle.
